Coconut - Celery Root Soup

I find this flavor combination really interesting. They both bring out the best of each other and create this smooth, sweet and comforting soup that is super easy to prepare and a hit with everyone!
Heat up the coconut oil in a large pot and add the celery root and roast for 5-10 minutes without browning too much, this is to bring out the maximum flavor.
Add the stock, ginger, coconut milk, lime juice and zest, some salt and pepper. Bring to a boil, cover and simmer for 25-30 minutes until the veggies are tender.
Remove from the heat and blend until smooth (either use an immersion blender or transfer carefully to a vitamix or similar)
Season to taste, serve and garnish with chopped cilantro and some hemp seeds or pumpkin seeds!
