I love chia seed pudding for breakfast. I prepare it the night before, store in the fridge and add fresh fruits and some nuts or granola for a nice crunch!

Ingredients

  • 1 date
  • 1 cup of nut milk (I use almond milk)
  • 2 tbsp of chia seeds
  • 1 tbsp of shredded coconut
  • Toppings: blueberries, chopped walnuts or any nuts you like, granola, drizzle of honey, some nut butter,....

Directions

In a powerful food processor blend the pitted date with the almond milk. Transfer to a jar with a lid and add the chia seeds. Stir a few times so you see the little seeds spread out before storing in the fridge with the lid on. You should do this to avoid big clumps of seeds stuck together. You can leave it there for 20 minutes up to overnight night (it actually lasts for a few days if you want to make extra).

When ready to it, remove the lid and add the coconut flakes, some fresh fruits, crunchy nuts and a drizzle of honey and enjoy.
