Cold pea and avocado soup

This is perfect for summer when it gets hot and you want an easy dinner or appetizer. You can make this soup as thick as you want and get a really creamy consistency. I added grilled shrimps here to make it a proper dinner, you could do without it or even add grilled chicken or crispy chickpea or even tofu!

Ingredients

  • 1 bag of frozen peas thawed
  • 2 avocados, peeled and pit removed
  • 1 bunch of cilantro
  • 1 lime, juiced and zested
  • 1 shallot, peeled and roughly chopped
  • 1 can of coconut milk
  • 2-3 cups of water or stock
  • 1 cup of grilled shrimps
  • Salt and pepper to taste

Directions

Place all the ingredients expect the shrimps in a powerful blender and turn on until really smooth. Start with only 2 cups of water and check if you like that thick consistency, if not add some more.

Put in the fridge for a little while until really cold.

Taste and adjust seasoning. Spoon in bowls and top with some grilled shrimps and more cilantro.
