This is the kind of super easy summer dinner when you want to keep it light. You could also serve this as an appetizer or in little shot glasses for cocktail hour!

Ingredients

  • 4 corn ears
  • 2 peaches
  • 1 yellow pepper
  • 1 green onion
  • 2 large tomatoes
  • 2 persian cucumbers
  • 1/4 cup of olive oil
  • 1 tbsp of AVC
  • Salt and pepper to taste
  • Toppings: little pieces of cucumber, avocado, peaches, tomatoes, flaky salt, fresh cilantro or basil,...

Directions

Cut the corn off the Cobb, chop all the veggies and fruits.

Combine all the ingredients in a powerful blender (you might have to do this in batches because there is a lot). Process until super smooth. I like to chill this for at least 1 hour before serving.

Serve the soup in bowls and arrange some toppings and fresh herbs. I like to finish it with a drizzle of olive oil and a pinch of flaky salt.
