I think this is my new summer favorite this year! I had left over corn on the cob the other day and was looking through my fridge and freezer to see what I could prepare it with... I kept it simple with only 3 ingredients and it is delicious!
Place, the corn, edamame and avocado into a large bowl.
Meanwhile place all the dressing ingredients in a jar and shake. Pour over the corn-edamame mix, add some salt, pepper and the parsley and toss.
