I think this is my new summer favorite this year! I had left over corn on the cob the other day and was looking through my fridge and freezer to see what I could prepare it with... I kept it simple with only 3 ingredients and it is delicious!


  • Kernels from 3 corn on the cob
  • 2 cup of edamame ( frozen, thawed)
  • 1 avocado, peeled and cut into small cubes
  • 1/2 cup of chopped fresh parsley
  • Salt and pepper to taste
  • Dressing: 2 tbsp of dijon mustard, 2 tbsp of white wine vinegar, 4 tbsp of olive oil)


Place, the corn, edamame and avocado into a large bowl.

Meanwhile place all the dressing ingredients in a jar and shake. Pour over the corn-edamame mix, add some salt, pepper and the parsley and toss.
