This a low maintenance and perfect meatless Monday dinner... No one is vegetarian in my family but I find sometimes that taking a break from animal protein is nice. This dish is hearty enough to even make my husband happy!!!
Quinoa or any type of grain would work great here as well.


  • 1 pack of couscous
  • 3 tbsp of olive oil
  • 1 bunch of asparagus, ends trimmed
  • 1 summer squash, cut in 4
  • 1 large zucchini, or 1 cup of baby zucchinis
  • 1 red onion, sliced
  • 1/3 cup of fresh herbs (basil, fresh parsley, cilantro, chives)
  • 1 lemon, juiced


Cook the couscous according to packaging instructions.

Coat all the veggies with olive oil, salt and pepper.

You can either grill them on the bbq or in a grilling pan for 4-5 minutes and then rotate and cook for noter 4-5 minutes.

Plate the couscous, chop the veggies roughly and arrange them all over. Sprinkle the chopped herbs and squeeze the lemon juice.

This could also be perfect as a side dish!
