"Creamy" chicken and broccoli skillet

I love 1 skillet dishes, easy to make and very little to clean up afterwards!


  • 1 lb of chicken breast, cut into 1 inch pieces
  • 2 tbsp of olive oil
  • 1 pinch of chili flakes
  • 3 garlic cloves, minced
  • 1/2 cup of cherry tomatoes, cut in 2
  • 2 cups of broccoli florets
  • 2 cups of baby spinach
  • 1/2 cup of oat milk ( cashew milk works great as well, or even regular milk or cream )
  • 2-3 tbsp of dijon mustard


In a large skillet, heat up the olive oil and add the chili flakes, chicken, some salt and pepper. Toss for 4-5 minutes until chicken gets golden brown. Add the garlic, tomato, broccoli and spinach and keep on cooking for 5-6 minutes until veggies are tender and spinach wilted. Add the milk and dijon mustard to give this a "creaminess" and nice kick to it!

If you don't fancy dijon, add some parmesan cheese and mozzarella instead.
