'Creamy' Chicken and Green Peas Soup

Soups are usually my go to on Mondays. Easy, no brainer and I never really feel like cooking at the beginning of the week. This soup has absolutely no cream and feels and tastes like it does. I use an immersion blender to puree some of the chicken that makes the soup thicker and creates a smooth consistency!!!


  • 2 chicken breast, bone in
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, minced
  • 2-3 tbsp of olive oil
  • 4-6 cups of chicken or veggie stock
  • Salt and pepper to taste
  • 1 1/2 cups of frozen petites peas, thawed


Sauté the carrots, celery, onions with the olive oil for 5-10 minutes stirring occasionally to make sure it does not burn! Add the chicken and brown it on each side for 2-3 minutes, this will really give tons of flavor! Add the stock, bring to a boil and let it simmer for 15-20 minutes. Remove the chicken and pull apart and discard the bones.

Replace 1/2 cup of the chicken and blend with an immersion blender, it does not have to be smooth, just thicker. Add the rest the chicken and the peas, add some salt and pepper and enjoy!!!
