Creamy Mexican slaw

This is the perfect addition to Tacos Tuesday, it is super easy to make and really delicious!


  • 1 green cabbage, thinly sliced ( you could use red if you like)
  • 2 tbsp of Vegenaise
  • 1 lime, zested and juiced
  • 1 tsp of maple syrup
  • 2-3 tbsp of olive oil
  • 1/2 cup of chopped cilantro
  • 2-3 tbsp of salty pepitas ( for extra crunch)
  • Optional: chopped avocado, grated carrots, grated radishes,...


I an large bowl, combine the Vegenaise, lime, maple syrup, cilantro, olive oil and some salt and pepper and mix well. Toss in with the cabbage, taste and adjust seasoning. Add any topping that you fancy or enjoy as it is!
