Creamy white bean soup

A new rotation to add to my Monday night soup list and let me tell you.... This is a really good one!!! I made extra since it was cold and wanted to have some the following day and I was so happy I did.

In a large pot, heat up the olive oil and cook the mirepoix on medium for 5-10 minutes until fragrant (meaning you can smell it).
Add both cans of beans and the stock, 1 tsp of salt and 1 tsp of pepper as well as the parmesan grind. Bring to a boil then simmer for 10-12 minutes. Take out 1-2 cups of beans with a bit of liquid and purée in your food processor until smooth. Transfer back to the pot, add the greens, zest the lemon and squeeze half of it in there.
Once the green are wilted taste and adapt the seasoning.
