I ate fried artichokes heart the other day and loved that dish so much that I have been dreaming about it. I’ve beed trying a few healthier versions of it until I came up with the perfect one here. It is crispy, yummy and flavorful.

Ingredients

  • 1 bag of frozen baby artichokes hearts, thawed and pat dried
  • 1 1/2 cups of bread crumbs
  • 3/4 cup of parmesan cheese
  • 1 tbsp salt
  • 1/2 tbsp of chopped rosemary
  • 1/2 tbsp of chopped thyme
  • 2 eggs beaten
  • Avocado oil spray

Directions

Preheat the oven to 425 degrees and spray a baking sheet with avocado oil.
Mix together in a bowl the crumbs, parmesan, salt and fresh herbs. Dip the artichokes in the eggs and in the bread crumb mix.

Place on the baking sheet and repeat. Once they are all done spray the artichokes with more oil, and bake for 15-20 minutes, flipping them half way. Sprinkle some salt.
