Crispy cod with corn tomato and avocado salad

Fish is always tricky with kids, if the flavor is too strong, they don't like it. This the kind of dish that my kids will eat. Hone tomato and corn are in season they make the perfect match and will elevate so many dishes like this one!

Preheat the oven at 425F.
Season the fish on both side with salt and pepper. Place the breadcrumbs and herbs in a food processor and pulse until fine. Mix with 1 tsp of olive oil oil.
Place the fish on a lined baking sheet and sprinkle the toppings all over. Cooker 8-10 minutes, depending on the fish you use and the thickness of it.
Cut the tomatoes in 2 and peel and chop the avocado, toss together with the corn, some olive oil and the lemon (juiced and zested). Season with some salt and pepper.
When the fish is cooked transfer to a serving platter and spoon the corn and tomato salad on top as well as some freshly chopped basil.
