Do you ever feel like something "meaty" but need a break from animal protein at the same time.... Well I do and found the perfect solution to it.... Crispy, spiced roasted mushrooms. I know out is not a protein but has so many nutrients, it is also super delicious and that crispy texture is jus beyond.... Did I say that it is super easy to make?
Preheat the oven at 425F and line a baking sheet with parchment paper.
Clean up the mushrooms with a damp cloth (do not run them under water or they will become rubbery). Cut off the stems and discard. Roughly chop the mushrooms in big chunks and transfer to the baking sheet.
Spray them with the oil and coat them well. Sprinkle all the spices and toss making sure that everything is evenly distributed.
Roast for 20-25 minutes tossing halfway. Sometimes I find that it needs a little extra oil halfway to help them get extra crispy.
Enjoy as a side or a main with lots of veggies around it. You could try this with any kind of mushrooms, I know I will. This would be delicious in a taco....
