Crunchy kale salad with spicy green goddess dressing

I love a crunchy salad, full of veggies and tossed with a creamy spicy dressing. Salads are usually my way of cleaning up the fridge... Which turns out good most to the time, but this was as GREAT! So I felt that I should share it... If you don't like spicy, remove the seeds from the jalapeño or simply omit it completely.


  • 1 bunch of green kale
  • 1/2 cup of chickpeas
  • 2 small cucumbers
  • 2 celery stalks
  • 1/4 cup of slice almonds ( I love the sweet roasted ones from Trader Joes)
  • 1/4 of avocado
  • 1-2 radishes or watermelon radish
  • 1/2 lemon
  • Spicy green goddess dressing: 1 garlic cloves, 1 tbsp of maple syrup, 1 cup of fresh herbs such as basil, cilantro, parsley, 1/3 cup of greek yogurt, 1 lemon, 1/4 of olive oil, 1/2 jalapeño


Chop up the kale and massage it with some lemon juice to make it more tender.

Place all the dressing ingredients in a blender and pulse until smooth and combined. Taste and adapt seasoning if necessary.

Chop the cucumbers, radishes and celery in small pieces and add to the salad along with the chickpeas. Toss with the dressing, then add the sliced avocado and the toasted almonds and enjoy!
