Crunchy veggie salad

Sometimes I want to eat a salad but need a crunch and something more consistent than just lettuce. I have done similar salads in the past but what makes the dish here is actually the vinaigrette, that ginger lemon one is amazing!

Ingredients

  • 1 cup of chopped broccoli
  • 1 cup of chopped cauliflower
  • 1 medium carrot, chopped
  • 2 radishes, julienned
  • 1/2 avocado
  • 1/2 cup of chickpeas
  • 2 tbsp of sunflower seeds
  • 2 tsp of almonds, roughly chopped
  • Micro greens to garnish
  • Vinaigrette: 1 lemon, 1 tbsp of fresh ginger, 1 tsp of maple syrup, 1/4 cup of olive oil

Directions

In a serving bowl toss the broccoli, cauliflower, chickpeas, radishes and carrots together.

Slice the avocado.

Assemble the ingredients for  vinaigrette, I like doing in a jar with a lid so I can easily shake it and also keep it in the fridge for a little while. Add some salt and pepper and a couple of tbsp of water (I always do that for my vinaigrettes, it thins them out and I use less oil).

Sprinkle the nuts and seeds, add some micro greens, top with the slices of avocado and drizzle a couple of tbsp of vinaigrette.

For extra protein you can add some hemp seeds as well and enjoy.
