For those who know me, Monday night soup is a must in my house. I t keeps things simple and packed with veggies. During summer I always try to come up with fresh soup that requires nothing else but chopping and a food processor. Here the combination of cucumber and cantaloupe is absolutely perfect! I am adding some shallot, garlic and jalapeño for a nice kick and lime juice to balance it all.

Ingredients

  • 1 cantaloupe, peeled, seeds removed and roughly chopped
  • 3 english cucumbers, peeled
  • 1 garlic clove
  • 1/2 jalapeno
  • 1 lime juiced
  • 1 large shallot
  • 1/3 cup of fresh cilantro
  • Salt and pepper to taste
  • Micro greens to garnish

Directions

Combine everything in the blender and process until completely smooth. Keep in the fridge until ready to serve as it taste so much better when it is really cold.

Serve and garnish with micro greens and/or small cubes of cucumber and melon.
