Delicious and clean noodle soup, ramen style

Sometimes I crave something warm and comforting for lunch but light at the same time... Does it make sense? Since I am doing a cleanse I really pay attention to what I am eating right now. This recipe took me 7 minutes to put together and checked all the boxes. The 2 things here are to use good quality chicken broth and to be able to find Shiratake noodles. Theses noodles have very little nutrients but also almost no calories... They are just here to give that noodle soup effect!


  • 2 cups of good quality chicken broth
  • 1/2 cup of cabbage, shredded
  • 3 large Shiitake mushrooms
  • 1/2 cup of leftover chicken ( or tofu, edamame work as well or even beef)
  • 1 pack of Shiratake noodles


Clean up and slice the cabbage and the mushrooms ( removing the stems).

Heat up the broth and add in the veggies until tender and cooked through. Toss in the noodles just to warm them up (they usually don't need cooking but make sure to check the packaging instructions).

Reheat the chicken or other protein you are using.

Transfer to a bowl and top with the chicken and enjoy!
