Makes 1 bundt cake

My kids and husband love banana bread, but I have to say that sometimes I crave something a bit fluffier and more like a cake than bread consistency... I think this one does the trick as it is super fluffy and is super easy as well.

Ingredients

  • 3 cups of AP flour
  • 4 medium ripe bananas
  • 1 tsp of salt
  • 2 tsp of baking soda
  • 1 cup of butter (softened)
  • 1/2 cup of organic cane sugar
  • 1/4 cup of brown sugar
  • 2 large eggs, room temperature
  • 1 tsp of vanilla
  • 1/2 tbsp of cinnamon
  • 1 cup of greek yogurt
  • 1/2 cup of walnuts

Directions

Preheat oven to 350°F. Spray your bundt pan.
Whisk together flour, salt, cinnamon and baking soda in a medium bowl.
Mash your bananas with a fork.
With an electric mixer, cream butter and both sugars until light and fluffy. Stir in mashed bananas and vanilla. Add eggs, one at a time, beating well after each addition.
Mix in the sour cream and the flour mixture. Beat the mixture until it just comes together. Add in the chopped walnuts.
Pour batter into prepared pan. Bake for about 50-60 minutes or until a toothpick comes out clean.
Once done, cool cake in pan for 20 minutes, then turn out onto serving platter and sprinkle some icing sugar.
