Easy green enchiladas soup

I am using rotisserie chicken and good quality store bought enchilada sauce to make this dinner super easy and fast!! It has a lot of veggies and for the fun I serve it with crunchy chips and everyone loves it.
Heat the olive oil in a medium sized pot over medium heat. Add the onions and sauté until translucent, about 5 minutes.
Add in all remaining ingredients and bring to a simmer. Allow to cook for 15-20 minutes until vegetables are soft. Adjust seasoning as needed and serve warm topped with garnishes of your choice.
