Easy green enchiladas soup

Serves 5

I am using rotisserie chicken and good quality store bought enchilada sauce to make this dinner super easy and fast!! It has a lot of veggies and for the fun I serve it with crunchy chips and everyone loves it.


  • 2 tbsp of olive oil
  • 1 purple onion, diced
  • 3 cups of shredded chicken (from a rotisserie chicken)
  • 1 16 oz jar of green enchilada sauce
  • 1 16 oz can of great northern white beans, drained and rinsed
  • 4 cups of chicken stock
  • 2 zucchini, cut into small cubes
  • 1 green bell pepper, cut into small cubes
  • 1 tsp salt and ½ tsp ground pepper
  • 1 tbsp cumin
  • Toppings: avocado , fresh cilantro, cheese, tortilla chips, sour cream, radishes


Heat the olive oil in a medium sized pot over medium heat. Add the onions and sauté until translucent, about 5 minutes.
Add in all remaining ingredients and bring to a simmer. Allow to cook for 15-20 minutes until vegetables are soft. Adjust seasoning as needed and serve warm topped with garnishes of your choice.
