Easy meatballs, couscous and tomato sauce

This is one of those meals that takes very little time to put together and saves me so much stress when I need dinner asap! You could use rice or pasta for this one, my kids just really love Israeli couscous.

Ingredients

  • 1 lb of ground meat (I used beef, but use what you want here)
  • 1/4 cup of breadcrumbs
  • 1/4 cup of grated parmesan
  • 1/4 cup of Italian parsley
  • 1 tps of dried Italian seasoning
  • 1/4 tsp of garlic granules
  • Salt and pepper
  • 1 jar of your favorite store bought organic tomato sauce
  • 1 box of israeli couscous
  • 2 cups of stock
  • 2 tbsp of olive oil
  • Toppings: fresh basil and grated parmesan to taste

Directions

Combine the meat with breadcrumbs, cheese, herbs, garlic, 1 tsp of salt and 1 tsp of pepper. Using a small ice cream scoop form the meatballs, there should be 12-14 of them.

Heat up a large skillet with 2 tbsp of olive oil and brown the meatballs on each side for about 4-5 minutes. At this stage we just want to create flavor not really cook the meatball since they will do that in the sauce.

Add the sauce and bring it to simmer for 5 minutes. Add in the couscous and stock. Bring to a gentle boil and then simmer until the couscous is cooked, it should be about another 10-12 minutes.

Grate some more parmesan on top and add some freshly chopped basil and done!
