Easy oven baked fish and veggies with green goddess sauce

This is super easy way to prepare fish, you put it all on a tray, in the oven, make the sauce, spoon it all over and done!

Ingredients

  • 1 medium zucchini
  • 1 bunch of asparagus
  • 2 cups of broccoli
  • 1 cup of cherry tomatoes
  • 3 large pieces of fish 7-8oz each or 5-6 small ones like 3.5oz per person ( cod, halibut, haddock, tilapia or even salmon)
  • Olive oil
  • Salt and pepper
  • 1 cup of green goddess sauce

Directions

Preheat the oven at 425F.

Wash all the veggies. Cut the zucchini in 1/2 inch thick and remove the ends of the asparagus. Cut the tomatoes in 2 and the broccoli into small florets.

Line up a baking sheet and arrange the washed and cut veggies on it. Drizzle some olive oil to coat it all, use your hands to be sure it is well mixed and coated. Nestle the fish here and there and coat it also with olive oil. Sprinkle salt and pepper on everything.

Bake for 15-18 minutes until fish is flaky and cooked through, this will depend on the thickness of you fish, the thicker it is the longer it will need.

When ready spoon the green goddess sauce on everything and enjoy!
