I love everything in a bowl.... Some people like it all separate, well for me combined in a bowl is the best way! I made my own falafel from a mix from Trader Joes and they were delicious... You can buy them already made or make them from scratch, up to you.

Ingredients

  • 2 cups of romaine, washed and chopped
  • 1 medium carrot
  • 1 persian cucumber
  • 2 beets cooked
  • 3-4 falafels
  • 1/4 avocado
  • 1/4 of avocado
  • 1/3 cup of cherry tomatoes
  • Tahini dressing: 1/2 cup of tahini, 1/4 water, 1 lemon, 1 tbsp of maple syrup, 1/2 cup of herbs such as chives and parsley and basil, salt and pepper

Directions

Wash and chop the lettuce. Peel and cut the veggies into small cubes.

For the falafels you can either make them  yourself from scratch or buy them already made or buy a high quality mix (which is what I did).

For the beets you can roast them or buy them cooked, they usually are in the fridge section near the fresh produce section.

For the tahini dressing, combine all the ingredients in a food processor and pulse until smooth. You can add more or less water to your desired consistency. It keeps in the fridge for a week or two.

Assemble the bowl (reheat the falafel if necessary), drizzle the dressing and enjoy!

Some Tzatziki would be delicious here as well some toasted pitta bread.
