I like easy meals for Monday night, it is the beginning of the week, kids have homework and I usually am busy driving them around. I think that soup is always a good way to go, plus it is perfect for meatless Mondays.
Sauté the onions, carrots, and celery with 2 tbsp of olive oil for 5-10 minutes. Add the zucchini and tomatoes and cook for another 5 minutes.
Pour in the stock and 1 tsp of salt, 1/2 tsp of pepper and add the parmesan grind. Bring to boil then let it simmer for 15-20 minutes until the veggies and soft and nicely cooked. Discard the parmesan grind .
Serve and sprinkle some parmesan on top and and any other toppings that you have and feel like.
