Makes 4-6 medium pancakes

I don't usually eat big breakfasts, however sometimes on week-ends I love a good baked oats, almond butter toast or avocado toast or something... I was craving pumpkin this morning and made these super easy almond flour pumpkin spice pancakes and they were DELICIOUS!

Ingredients

  • 2 eggs
  • 2 tbsp of pumpkin purée
  • 2 generous tbsp of almond flour
  • 1/2 tsp of baking soda
  • 1 tsp of vanilla extract
  • 1/2 tsp of pumpkin spices
  • 1/2 tsp of cinnamon
  • 1 pinch of salt
  • 2 tbsp of avocado oil or coconut oil
  • Toppings: sliced pears or apple or persimmons, crushed pecans or walnuts and maple syrup

Directions

In a medium bowl mix together the eggs, vanilla, spices and pumpkin puree until smooth. Add in the flour, baking soda and salt and whisk until there are no more lumps.

Heat up a medium pan with the oil and spoon in 1/4 cup at a time. Wait for a minute or two and carefully flip. Repeat with the remaining of the batter. I cook these one a a time because since there is very little flour they can be tricky to flip, the key is patience here but it is SO worth it.

Plate the pancakes and arrange a few slices of pears and crushed pecans, drizzle some maple syrup and enjoy!
