Fall veggies with fried eggs

This s the kind of dish that can de adapted to almost whatever veggies you have in your fridge. I have done it so many times in so many different ways and it always turns out great.
In a medium pan heat up 2 tbsp of olive oil and sautéed the onion fro a few minutes. Add in the squash and stir for 2-3 more minutes. Season with some salt and pepper to taste. Add in the zucchini and kale and leave on medium for an additional 2-3 minutes.
Taste the veggies to see if they are cooked and tender. Make little nests here and there and carefully break the eggs. Season with some more salt and pepper and dried herbs if you want it.
Cover the pan with a lid and let it cook on low and steam for 3 minutes. I like my eggs runny so I ws watching it like a hawk and as soon as I could see that the whites were cooked, I removed it from the stove.
Cut some avocado and add to the eggs. Serves and enjoy with some salads and/or toasts on the side.
