Farmer's market little gems with petites peas and green goddess dressing

I love little gems, they are so crunchy and tasty!!! I like leaving the leaves whole and plating it beautifully, it really makes a gorgeous dish!

Ingredients

  • 2 heads of little gem
  • 2 cups of fresh peas
  • 1 bunch of chives
  • 1/3 cup of breadcrumbs (or cauliflower crumbs)
  • Dressing: 2 garlic cloves, 1 cup of fresh herbs such as basil, cilantro, parsley, 1/3 cup of greek yogurt, 1 lemon, 1/4 of olive oil
  • Optional: 2-3 soft boiled eggs

Directions

Wash the little gems and separate the leaves and arrange on a platter.

Quickly blanche the peas for 1 minute and add on the lettuces. Roughly chop the chives and sprinkle on top with the breadcrumbs.

Place all the dressing ingredients ( lemon zested and juiced) in a food processor and pulse until smooth. Taste and add some salt and pepper. Spoon some of the dressing (keep the rest in the fridge for another day or as a dip) on the salad, add some fishing salt and pepper.

You could add some soft boiled eggs shredded chicken or grilled shrimps to make it a complete meal instead of a side dish.
