Makes 1 pie

Since I am using store bought pie, this recipe takes me 5 minutes to assemble. You can make this with fresh or frozen blueberries so this is an all year dessert. It is fathers day and I know my husband loves blueberries so we're surprising him with this. Add a scoop of vanilla ice cream on a warm piece of pie an dit is heavenly!


  • 1 pie dough (store bought, thawed)
  • 4 cup sof blueberries
  • 1/2 cup of sugar
  • 1/2 lemon
  • 2 tbsp of flour
  • 1/2 tsp of cinnamon
  • Optional: vanilla ice cream and whipped cream


Preheat the oven at 400F.

Place the dough in a pie shell and keep in the fridge while you make the feeling. You always want the dough to to stay cold so it will be flaky!

Mash 2 cups of the blueberries and mix with the sugar, flour, cinnamon and lemon juice. Pour in the pie and top with the remaining blueberries. Sprinkle 1-2 tbsp of granulated sugar and bake for 50-55 minutes, until the curst is golden brown and filling bubbling!

Leave to rest and cool down for a bit. Enjoy with a scoop of vanilla ic cream and or whipped cream!!
