Flat Bread Herbed Ricotta

Sometimes I like to change plans and improvise lunch and prepare something different than I originally planned. This is what happened this week, kids did not want eggs so looking into my fridge I realized that had everything I needed to make a healthy version of flat bread pizzas with veggie toppings!
Preheat the oven at 350F.
Mix the ricotta with the herbs, lemon zest, some salt and pepper and the parmesan.
Place the flat bread on a baking sheet and spread the ricotta a mix on top of all of them. Put in the oven for 5-7 minutes until the bread gets crispy!
Remove form the oven and add the toppings you want, I made single toppings because each of my kids like different things but feel free to mix and match!
