Flourless Chocolate Cake

This cake is so moist, light and VERY 'chocolatey'. It is kind of like cooking a chocolate mousse, almost no sugar... We could almost say that it is healthy.
preheat the oven at 275F. Butter a 9 inch springform pan.
Melt the butter and chocolate together either on the stove or in microwave ( 30 seconds at a time and you stir each time until completely melted) Let it cool for a few minutes and add the maple syrup.
Beat the egg whites until stiff peaks from.
Gently fold the whites in the chocolate mixture ( 1/4 at a time).
Pour the batter into the prepared pan and bake for 40-45 minutes until the center is set. ( Check already at 35, you would rather eat this cake underbred than overcooked and dry)
Let it cool on a rack. Serve at room temperature with some whipped cream, ice cream or simply with some confectioners' sugar....
