This is like biting in a cloud! Halfway between a soufflé and an omelet! Plus it is really easy to make!


  • 2 eggs
  • 1 bunch of mixed lettuces
  • 1 tbsp of chives, chopped
  • 4-5 cherry tomatoes, cut in 2
  • 4-6 oz of fresh goat cheese, crumbled
  • Salt and pepper


Separate the eggs, mix the yolk with some salt and pepper. With a hand mixer, beat the egg whites until fluffy.
Gently fold in with yolks.

Spray a small frying pan and transfer the eggs.
Cook for 2 minutes on one side and add the tomatoes, goat cheese and lettuces, fold in 2 and cook for another 2-3 minutes.

Plate and sprinkle some chives and maybe add more salt and pepper.
