
Fluffy Omelet

The consistency of this omelet is almost as airy as a soufflé, it is really good and not too much work! You can add whatever you want on top, I went with goat cheese and chives, and even added smoked salmon and arugula salad on my plate.

Separate the yolks from the whites. Add the milk, some salt and pepper to the yolks and beat with a fork until smooth.
Beat the egg whites for 1-2 minutes until frosty and they keep their shape. Gently combined both with a spatula and pour into a hot, greased pan. Cook for a couple of minutes and cover for another 2-3 minutes until cooked through. Transfer to a plate and sprinkle the goat cheese and chives and any other toppings you feel like!
