Frangipane brings me straight back to my childhood, it was one of my all time favorite. I am making a version here using unrefined coconut sugar and adding pine nuts for extra flavor. I made my own dough but store bought is just as delicious!

Ingredients

  • 1 pie dough (store bought, thawed)
  • 1 1/2 stick of softened butter
  • 3/4 cup of coconut sugar
  • 1 cup of ground almonds
  • 2 eggs
  • 1/2 tsp of almond extract
  • 1 tsp of vanilla extract
  • 1 pinch of salt
  • 1 1/2 cup of pine nuts

Directions

Preheat the oven at 350F and line the dough in a pie mold.

With a electric mixer, combine the butter, sugar, eggs,  both extract until smooth. Add in the almond flour, salt and gently fold it together.

Spoon the mix on the pie dough and nicely even the surface. Sprinkle the pine nuts all over, gently pressing down so they get halfway in the mix.

Bake for 45-55 minutes until set and cooked through. If you see that the pines nuts get too dark, cover them with some aluminum foil until the rest of the time.

Enjoy with some whipped cream or vanilla ice cream.

    Hi , this recipe sounds delicious! In your ingredients it calls for ground almonds- is this the almond flour? Can’t wait to try this out .

      Yes, or you can use almonds that you ground yourself, that works as well.
