Fresh corn and crab salad

Summer means salad at lunch all the time for me.... But in order no to get bored I always come up with new combinations and new vinaigrettes, this one was so easy and absolutely yummy!! Even my husband devoured it!

Wash and chop the salad, cut the tomatoes in two and slice the avocado. Plate these into two bowls and set aside.
Mix the crab meat with 1 tbsp of the mayo and 1 tsp of the mustard and squeeze in half a lemon. Sprinkle some salt and pepper to tase and mix together.
Combine the remaining mayo, mustard and lemon and whisk together to make the vinaigrette, adding 1/4 cup of olive oil. Drizzle on the salads and spoon the crab on top. Add some more salt and pepper. Chop some fresh parsley that you sprinkle on top and I also added a few jalapeño slices on mine for a little kick.
If you don't like crab, do the same with tuna or even rotisserie chicken!
