Fresh pineapple salsa

I love Mexican food and am making the most of Cinco de Mayo today!!! I always find it fun to experiment with what I have in my fridge (especially in quarantine time, right). So today I wanted to try a fresh pineapple salsa which I had never done and I love it! Super fresh with a nice kick from the jalapeño and shallots and some chili powder!!!
In a medium serving bowl, combine the pineapple, shallot, cilantro, chili powder and jalapeño. Add the lime juice and maldon salt, and stir to combine.
Adapt seasoning if need be.
For best flavor, let it rest for 10 minutes or longer before serving. It’s best served fresh but keeps well, chilled, for up to 4 days.
