Fun take on everything bagel with smoked salmon

This is a fun take on a everything bagel with smoked salmon which makes a delicious brunch!
Preheat the oven at 400F. Cut the puff pastry in 6 rectangles, place them on a lined baking sheet brush with olive oil and sprinkle everything but the bagel seasoning.
Place another lined baking sheet on top of it so it adds some weight ( and will not puff up) and bake for 15 minutes.
Boil the eggs for 8-10 minutes and rinse under clod water ( that will stop the cooking instantly) and peel them.
When the puffs are cooked, top with some slices of smoked salmon and avocado, drizzle with olive oil. Slice the boiled eggs and put on top of toasties, sprinkle some more seasoning and micro greens.
