This is my favorite tradition since I have been a little girl. You eat the king's cake, get the surprise and become king or queen! Besides the cuteness of this, the taste of that cake is unbelievable. I have been making it for a while since it is hard to find here in LA, but I have cleaned up the recipe a bit this year!

Ingredients

  • 2 sheets of puff pastry, store bought, thawed
  • 2 cups of almond meal
  • 1 cup of coconut sugar
  • 3 eggs, plus 1 for egg wash
  • 1 stick of butter, at room temp
  • 1/2 tsp of almond extract
  • 1 almond, to hide in the cake as the surprise
  • Glaze: 1-2 tbsp of honey

Directions

Preheat the oven at 400F.

In a large bowl pour the almond meal, coconut sugar and butter and using an electric mixer, combine until smooth and creamy.

Add the eggs and the almond extract.

Layer the puff pastry on a baking sheet and spoon the almond cream in the center. Hide the almond and cover with the second layer of pastry. Using a fork pinch the dough together on the border all around to seal it.

Make a whole in the center using a knife to create ventilation and make whatever design you want on the pastry. Bake fro 35-40 minutes or until golden brown. If you see that the dough gets dark too quickly, loosely cover with foil until ready.

When it comes out of the oven, heat up the honey in the microwave and glaze the cake with a brush.
