Garden Veggies Soup

This is so smooth and thick, it's a really satisfying soup!
Sauté all the veggies with 2-3 tbsp of olive for 5-7 to minutes. This will allow to bring out maximum flavor of the vegetables.
Add 6 to 8 cups of water, some salt and pepper and bring to a boil. Lower and simmer for 15-20 minutes until veggies are soft and cooked through.
Using an immersion blender purée the veggies until smooth.
Serve into bowls and sprinkle with hemp seeds or pumpkin seeds.
