Garlicky sweet potato fries

For those who know me, you'll remember that I am a sweet potato fanatic... I could eat them every day in every form. I think if you try these ones, you will totally agree with me! Be prepared to make extra because they will be gone in no time! I used a mix of orange and purples ones, but it works with just one sort or even the white ones....
Preheat you r oven at 450F.
Peel and slice the potatoes, then cut them into fries shape. I like rinsing them and dry them ( this step makes it extra crispy).
Line them on a baking sheet but do not overcrowd them otherwise they will not crisp. If there are too many spread then onto 2 baking sheets.
Drizzle with avocado oil and sprinkle some salt, toss to coat.
Bake for 25-30 minutes, tossing and shaking the sheets halfway through.
Melt the ghee and toss with garlic granules. When the fries are ready and piping hot mix with together. Transfer to a serving dish, sprinkle some flaky slat and the fresh herbs! Enjoy!
