Ginger chicken with caulirice

This dish is a perfect dinner when you feel like having something clean. Especially after the holidays, I really need to eat healthy and a clean as possible to start the New Year the right way! My kids will eat this as well, maybe not with the dressing though.

Ingredients

  • 3 chicken breasts, boneless and skinless
  • 1 lime, juiced and zested
  • 3 tbsp of chicken broth
  • 2 tsp of fresh ginger, grated
  • 1/4 cup of fresh basil leaves
  • 1/2 cup of fresh mint leaves
  • 2 cups of caulirice
  • 1 bunch of kale, chopped
  • 2-3 tbsp of olive oil
  • Salt and pepper

Directions

Season the chicken with salt and pepper on each side.

Heat some oil in a skillet and cook the chicken for 5 minutes on each side until cooked through. You can always check with a thermometer if you are not sure (165F).

Transfer to a plate and leave it to rest. Add the lime, chicken broth and chopped herbs to the pan and reduce for 2 minutes. Pour in a jar and leave on the side.

Heat up 1 tsp of olive oil and cook the caulirice and kale for 3-5 minutes until tender, season.

Plate the caulrice with the chicken on top and drizzle the sauce all over.
