I always love to come up with fun ways to use leftovers. Some people do not like to eat leftovers, I LOVE it! It makes my life easier and it turns out to be delicious 99% of the time. In this case I had rice and and peas from the night before. I guess you could use any kind of vegetable you have at hand, just sautée them for a few minutes with the ginger until they are tender.

Ingredients

  • 1 cup of cooked rice
  • 1 tbsp of grated fresh ginger
  • 1 leaf of kale, stem removed and finely chopped
  • 1 cup of leftover veggies ( I used peas and zucchinis here)
  • 1/2 avocado, chopped
  • 1 egg
  • salt and pepper
  • 1 tbsp of tamari or soy sauce

Directions

Heat 1 tbsp of olive oil with the ginger until fragrant, add the kale and stir for another 2 minutes. Add the rice and veggies and toss all together until everything is warm (a couple of minutes) . Add the tamari, some salt and pepper. Transfer to a bowl and cook an egg in the same pan, add on top of the rice, with the avocado and some chili flakes or sriracha for those who like to add a kick to it. I would totally do that for my family as dinner, I would maybe add chicken.
