Makes 6-8 medium waffles

I don't know about you but this is going to be my Christmas breakfast fro sure this year!!! I have made them a few times to taste the recipe and my kids keep on asking for more!!!! They are crisp on the outside and fluffy inside. I always make extra and freeze them for later.

Ingredients

  • 1 cup of flour (I used whole wheat)
  • 1 1/2 cup of oat flour
  • 1 tbsp of baking powder
  • 1/2 tsp of salt
  • 1 tsp of cinnamon
  • 1/2 tsp of ginger
  • 1 large egg
  • 2/3 cup of almond milk
  • 1/2 cup of coconut oil, melted
  • 1/2 cup of pumpkin puree
  • 2 tbsp of molasses
  • 1/3 cup of coconut sugar

Directions

Preheat your waffle iron.

Combine all the dry ingredients in a medium bowl.

Do the same for the wet ingredients, whisking until super smooth and you get a homogenous batter. Sift the dry ingredient over the egg mixture and stir until just combined.

Pour 1/4 cup of the batter in your waffle iron and cook for approximately 3 minutes( that depends on the size of you waffle iron as well so you might have to adapt it).

I like cutting them into sticks and drizzling some maple syrup ( I also some add nut butter on mine).

I promise you that this is the ultimate comforting Holiday breakfast!
