Goat cheese and green peas quiche with sun dried tomatoes

Makes 1 quiche

Quiches and frittata are so versatile and can be really easy to make especially if you use store bought dough. I call them empty your fridge kind of dishes... Here is a classic but packed with flavor!

Ingredients

  • 1 pack of frozen puff pastry (or pie crust), defrosted
  • 2 cups of cooked peas (I used frozen thawed)
  • 8 eggs
  • 1/3 cup of sun dried tomatoes
  • 8 oz of fresh goat goat cheese
  • Salt and pepper

Directions

Preheat the oven at 400F.

Put the dough in a  floured pie dish (so it does not stick).

Drain and roughly chop the sun dried tomatoes.

Beat your eggs with a fork, add the peas and sun dried tomatoes. Season the egg mixture. I usually add (depending on the filling) 1/2 tsp of each salt and pepper.

Pour everything on top of the puff pastry. Sprinkle the goat cheese evenly all over and bake for 30-40 minutes until the egg mix is set in the center.

Depending on your oven you may have to turn down the temperature at some point to 350F as to not burn the crust of the quiche, it should be golden brown and crispy.

What I love about this dish, it is like the frittata, there are so many ways to make this and it is perfect for lunch or brunch and full of good things.

If you want to mix it in, this is one of the most versatile dish ever. FYI, most quiche add-ins should be pre-cooked and cooled down a bit, Spinach, kale, bell pepper, and tomatoes can be fresh, but you can definitely sauté them first if desired. Some of my favorite quiche add-ins:

cooked cubed ham
bacon ( turkey bacon)
caramelized onions
sautéed mushrooms
sautéed chopped asparagus
chopped fresh parsley
