Goat cheese spinach frittata

This is usually my go to brunch recipe, I always mix it up depending what I have in the fridge. This week I have lots of spinach which goes really well with goat cheese....


  • 8 large eggs
  • 2 cups of cooked spinach
  • 4-6 oz of crumbled goat cheese
  • salt and pepper


Beat the eggs fro 30 seconds with a fork and add some slat and pepper to taste, I usually add 1/2 tsp of pepper and 1 tsp of salt.

Preheat the oven at 375F.

In a pie dish or cast iron, drizzle some olive oil to great it so the frittata will not stick. put the spinach and pour the eggs on top. Sprinkle the goat cheese all over and cook in the oven for 30-35 minutes until set.

Enjoy with a nice leafy green salad. I also always add some micro greens and sliced avocados.
