Tomato Goat Cheese Tartlets

I love playing around with puff pastry in the kitchen, whether I go a savory or sweet way it always turns out really nice. These mini tarts are great for snack or brunch... Feel free to improvise and maybe add zucchinis, pesto, fresh basil, ....
Preheat the oven at 450F.
Cut the puff pastry in the 6 pieces (make sure your surface has flour on it so the dough will not stick) and prick all over with a fork. Put on baking sheet and bake for 15-20 minutes until golden brown.
Let the puff pastry cool down a little bit. Spread some goat cheese on it and add tomato slices on each. Drizzle with some olive oil and some salt and pepper.
I served this to my kids with some crudités and a spinach salad for the adults and it was fantastic!
