These really easy goat puffs make a great lunch, brunch or can be even transformed into bite size for a nice cheese platter!


  • 1 sheet of puff pastry (store bought, frozen, thawed)
  • 8-10 oz of goat cheese
  • 1 egg
  • 1 bag of mixed greens (for salad)
  • 1 bunch of cherry tomatoes
  • 2-3 tbsp of toasted pine nuts
  • Dressing: 1 tbsp of dijon, 1 tbsp of maple syrup, 1 tbsp apple cider vinegar, 1/4 cup of olive oil


Preheat the oven at 400F.

Cut the puff pastry into 6 squares. Place a bit of goat cheese in the middle of each square and fold the corners towards the center, covering the cheese. Repeat with the rest of the puff pastry.

Beat the egg and brush each square. Bake for 20-25 minutes or until crips and golden brown.

Meanwhile mix all the dressing ingredients together. Plate the mixed greens, and tomatoes and drizzle some of the dressing. Sprinkle some pine nuts and add the goat puffs on top.
