This kind of 1 tray dinner is my kind of meal, it is easy to assemble and easy to clean up! I Always try to add veggies and make it a complete meal.

Ingredients

  • 5 pieces of 6-8 oz of salmon
  • 1 tsp of sumac
  • 1 tsp of oregano
  • 1/2 tsp of salt and pepper
  • 2 medium garlic cloves, crushed
  • 1 cup of artichoke hearts (I used frozen ones, thawed)
  • 1/2 cup of cherry tomatoes, cut in 2
  • 1 lemon zested, cut in 4
  • 1 zucchini thinly sliced (lengthwise)
  • 2 tbsp of olive oil
  • 2 medium garlic cloves, crushed

Directions

Preheat the oven at 450F.

Combine the spices, crushed garlic and lemon zest together.
Slice the zucchini and place on a baking sheet and place the salmon on top. Sprinkle the spices all over the fish, cut the lemon in 4 and place on the baking sheet. Arrange the artichoke hearts sand cherry tomatoes around and bake at 450F for 8-10 minutes. I like my salmon still quite pink in the center so I will go for 8 min max... If you prefer more web done, just leave fro 10 min.

Squeeze the juice from the lemons on top and enjoy!
