Greek sheet pan chicken dinner

I always love 1 sheet pan dinners, easy to prep and easy to clean!!!


  • 1 lb of chicken tenders
  • 3 tbsp of olive oil
  • 3 lemons
  • 3 garlic cloves, minced
  • 2 tsp of dried oregano
  • 1 tsp of fresh thyme
  • 1 red onion
  • 1 lb of baby potatoes
  • 1/4 cup of crumbled feta
  • 1/4 cup of olives


Make the marinade by combining the olive oil, the  zest from 1 lemon, the garlic, oregano and thyme. Put it all in a zip log bag and add the chicken for at least 20-30 minutes (can be made the night before).

Slice the onion, cut the baby potatoes in 2  and cut the remaining 2 lemons in 8. Place it all on a baking sheet and toss with the chicken,

Place in a preheated oven at 400F for 20-25 minutes ( or until chicken temperature is at 165F).

Sprinkle with the feta and olives and serve.
