Green penne pasta

This is a veggie loaded dinner and really easy to make! Simply saying to the kids that they are having pasta for dinner makes it a success!!!

Ingredients

  • 1 pack of whole wheat penne pasta
  • 1 cup of frozen veggies thawed
  • 4 cups of spinach
  • 2 garlic cloves, minced
  • 1/2 cup of milk of choice (I used almond milk)
  • 3 chicken italian sausages, roughly chopped
  • 1 pinch of chili flakes (optional)
  • 1 large zucchini, cut in small cubes
  • Toppings: fresh basil, pine nuts, cheese

Directions

Cook the pasta according to packaging instructions ( make sure to save some the cooking water for the sauce).

Drizzle some olive oil, salt and pepper over the chopped zucchini and roast for 10-15 minutes at 450F ( you can even broil them a bit if you like a good char, or grill them on the grill, that is the fastest way to do it).

Sauté the garlic and spinach with the chili flakes, some salt and pepper until wilted. Add the milk and using an immersion blender just whizz until smooth.

Cook the the sausages in a pan until golden brown and cooked through. I always try to use the same pan for extra favor (and less washing) and just transfer to my serving dish until I can assemble it all.

Combine with the pasta, peas and zucchini and sausages and taste. If it is too dry and 1/2 cup of the cooking water.

Sprinkle some cheese and fresh chopped basil and oven maybe eom toasted pine nuts and enjoy!
