Makes 8 medium flat breads

This was ideal for St Patrick but I would totally make it again for another occasion as it was so easy and tasted delicious with hummus and eggplant dips!

Ingredients

  • 2 cups of baby spinach
  • 2 garlic cloves
  • 1 tsp of salt
  • 1/4 cup of coconut yogurt ( or greek yogurt works as well if you eat dairy)
  • 1/3 cup of sparkling water
  • 2 cups of flour plus extra for dusting(I used spelt, wholewheat is great an d regular as well)
  • Toppings: hummus, guacamole, eggplant dip,tztaziki....)

Directions

Place everything but flour and toppings in a blender and process until smooth.

Put the flour in a large bowl. Make a well in the center and pour the spinach liquid. Mix first using a wooden spoon then get your hands in there until you get it sticks together and forms a ball.

Remove from the bowl, dust some flour and knead until you get a soft dough ball and it bounces back, just for a couple of minutes.

Divide the dough into 8 equals portion and roll in a round shape. Start by flattening them with your hand then switch to a rolling pin until you get a roughly 6-inch round shape.

Heat a frying pan on medium. Grease with avocado oil and fry the bread on each side for 2-3 minutes until cooked and golden brown.

Enjoy with some yummy dips or topped with a salad!
