Grilled fish with crunchy breadcrumbs and fresh herbs

This little mixture of crunchy crumbs with garlic and fresh herbs is a really nice touch on all kind of fish, chicken even salads. They keep for a little while in the fridge so be sure to make extra because they are addictive!

Ingredients

  • 5 filets of trouts
  • 1 cup of breadcrumbs (homemade or store bought)
  • 2 garlic, minced
  • 1 cup of mixed fresh herbs (I used tarragon, chives, parleys, chervil)
  • 2-3 tbsp of olive oil
  • 1 lemon
  • Salt and pepper

Directions

Dry up the fish with paper towel and generously season  with salt and pepper. I like adding a bit of paprika sometimes as well, it adds a nice touch.

Place the breadcrumbs and peeled garlic in a food processor and pulse until super fine and combined. Heat a medium skillet, add 1 tbs of olive and toast the garlicky crumbs for a couple of minutes ( until you can smell those nice flavors). Meanwhile finely chop the herbs in the food processor as well.

Transfer it all into a bowl and combine.

Cook the fish with the remaining olive oil. Start with the flesh down on high heat for 3 minutes and flip on the other side and finish on medium for another 2 minutes.

Transfer to a serving plate, sprinkle the breadcrumbs, add a couple more fresh herbs and squeeze some fresh lemon all over.
